The first evidence of the professional activity of distillers dates back to 1908: the year in which the oldest production report of which we have a copy dates back and which refers to Giuseppe Bonollo, the progenitor of the most important dynasty of Grappa producers in existence today . Umberto Bonollo, one of Giuseppe's sons, continued the family business in Veneto, the most important Italian region for tradition and grappa production.

The company, still firmly in the hands of the family, is located in the province of Padua with two plants: the Conselve distillery, where grappa, grape brandy and brandy are obtained, and the Mestrino headquarters, where the production of liqueurs and the bottling of the company's distillates takes place, which are marketed on the national and international market. However, at Bonollo grappa remains the main product. The current president, Bruno Bonollo (grandson of the founder) has, in fact, summarized the company's mission as follows: to obtain grappas characterized by a wide and typical range of aromas, but also characterized, in the mouth, by a frankness and lightness in order to satisfy the hedonistic needs of even the most modern and demanding consumers. The exclusive production know-how developed in Bonollo through the commitment, passion and always innovative approach common to four generations of family master distillers has allowed to develop the Bonollo Unico System (S.U.B.): a production system which oversees the management of all the activities necessary for the realization of grappa: from the collection and controlled storage of the raw material, aimed at preserving its aromatic integrity, up to flexible distillation, aging, packaging and enhancement of the by-products in the maximum respect for the environment.
