The first testimonies of the professional activity of distillatori date 1908: the year in which the oldest production complaint is published and refers to Giuseppe Bonollo, the head of the most important dynasty of producers of Grappa today existing. Umberto Bonollo, one of the sons of Giuseppe, continued the family activity in Veneto, the most important Italian region by tradition and production of grappa.

The company, still firmly in the hands of the family, is located in the province of Padua with two establishments: conselve's distillery, in which grappas, grape and brandy are obtained, and the headquarters of Mestrino, in which the production of liqueurs and bottling of corporate distillates, which are marketed in the national and international market. The Bonollo the grappa remains the main product. The current president, Bruno Bonollo (nipot of the founder) has, in fact, so synthesized the company mission: obtain grappa characterized by a wide and typical range of aromas, but also contradictory, in the mouth, by a frankness and lightness in order to satisfy the hedonistic needs of even the most modern and demanding consumers. The exclusive production know-how developed in Bonollo through the commitment, passion and approach to four generations of master distillers of the family has enabled the Single System to be developed Bonollo (S.U.B.): a production system that presides over the management of all the activities necessary to the realization of the grappa: from the collection and the controlled storage of the raw material, aimed to preserve its aromatic integrity, to the flexible distillation, to the aging, to the packaging and to the valorization of the byproducts in the maximum respect of the environment.
