The name " tequila ", indicates an internationally recognized denomination of origin , and designates agave brandy produced in the State of Jalisco and in specific areas of the states of Nayarit, Guanajuato, Michoacán and Tamaulipas. It must also have an alcohol content of 40-45 ° and be obtained by double distillation in a batch still .

The product must be manufactured in Mexico and contain at least 51% blue agave distillate .

The types of Tequila are:

Premium : tequila produced with 100% agave tequilana.

Mixto : tequila produced with at least 51% tequilana agave, together with other sugary substances, such as corn syrup or sugar cane.

Blanco (white) or Plata (silver): a white spirit, not aged or resting for 60 days in steel. Joven (young) or Gold: products of this type take on a golden color thanks to the addition of caramel which gives greater softness to the distillate; in other cases it gives a rapid aging which is legal in this country.

Reposado (rested): means "rested", that is product aged in cask; the tequila is in fact aged for at least 3 months in oak vats in order to acquire tertiary aromas.

Añejo (aged or vintage): the product is aged in cask for at least one year, although most distilleries age it for at least 4 or 5 years.

Extra añejo (extra aged or ultra aged): product that reaches 8 years of aging, becoming more like a brandy and losing the typical notes of the distillate.
