Spumante Opera rosé brut classic method
The confection.
Soft pink, nuanced, blush, lively and continuous effervescence.
Fresh nose, with great fruity complexity, pomegranate, freshly picked cherry, blood orange, peach blossom; blends fruit notes that are both tangy and sweet; closes with rose, talc and woody essence.
The impact on the palate is rather enveloping, the dry glaze is delicate, linked to the presence of black berried grapes in maceration, the juicy and citrus expressiveness returns overbearingly, the closure is, however, creamy, with sweet memories, sugared almonds, of good length.
Vine varieties used: Chardonnay, Pinot Noir and Pinot Blanc.
Selection of the grapes: in the vineyard with manual harvesting in boxes of a maximum of 18 kg, grapes from the Franciacorta vineyards.
Vinification: in white in a pneumatic press with soft pressing of the grapes and use of the second fraction of all our vineyards. After static and physical separation from the impurities of the must at low temperatures, the inoculation of selected yeasts for fermentation takes place in stainless steel tanks at a controlled temperature. This is followed by racking and lowering of the temperature to around 10°C to avoid malolactic fermentation. Once the "draught syrup" has been added, it is bottled, capped with a crown cap and laid down in a pile for the second fermentation.
Bottle refinement: 18 months.
