The name "tequila", indicates a denomination of controlled origin, internationally recognized and designated the agave water produced in the state of Jalisco and in specific areas of the states of Nayarit, Guanajuato, Michoacán and Tamaulipas. It must also have an alcohol content of 40-45° and be obtained by double distillation in discontinuous alembic.
The product must be manufactured in Mexico and contain at least 51% of blue agave distillate.
The types of Tequila are:
Premium: tequila produced with 100% tequilana agave.
Mixed: tequila produced with at least 51% of tequilana agave, together with other sugar substances, such as corn syrup or sugar cane.
Blanco (white) or Other (silver): a white spirit, not aged or resting for 60 days in steel. Joven (young) or Gold: the products of this type take golden color thanks to the addition of caramel that gives more softness to the distillate; in other cases instead it gives a quick aging that in this country is legal.
Reposado (reposed): means "reposed", that is, produced in cask; the tequila is in fact aged for at least 3 months in oak tines so as to acquire tertiary aromas.
Añejo (old or vintage): the product is aged in cask for at least one year, although most distilleries age it for at least 4 or 5 years.
Extra añejo (extra aged or ultra aged): product that also reaches 8 years of ageing, becoming more similar to a brandy and losing the typical notes of the distillate.
