Franciacorta Secolo Novo Brut Millesimato
The exaltation of the terroir.
Shiny green gold, very subtle effervescence, of great continuity, so minute as to seem absent, it is reactivated at the slightest touch. The olfactory attack is broad, immediately expressing honeyed tones, not too condescending, such as linden, rhododendron; the uniqueness of the hill is highlighted by clear hints of iron, minerals and salt; continues on the sweet spices, marzipan, the balsamic aromas are well rhythmic, alternating with the floral part, the elder then flows into an elegant hint of barley candy and pear pulp.
Despite the small dosage, the wine is dry, the body appears slim despite the mass, the effervescence has the same development noted on the nose, i.e. very delicate and creamy; the length reaches impressive levels, above all for the saline, camphor, flint notes, with hints of spicy roots and herbs and horseradish.
Vine varieties used: 100% Chardonnay.
Selection of the grapes: In the vineyard with manual harvesting in boxes of a maximum of 18 kg. Grapes coming exclusively from our vineyard of La Santissima di Gussago.
Vinification: In white in a pneumatic press with soft pressing of the whole grapes and use exclusively of the 1st fraction. After static and physical separation from the impurities of the must at low temperatures, the inoculation of selected yeasts for fermentation takes place in stainless steel tanks at a controlled temperature. This is followed by racking and lowering of the temperature to around 10°C to avoid malolactic fermentation. Once the "draught syrup" has been added, it is bottled, capped with a crown cap and laid down in a stack for the second fermentation.
Bottle refinement: 54 months.
