A beer tradition from 1240
The history of the brewery finds its origin in Notre-Dame de Leffe, an abbey of premostratensi canons founded in 1152. Premostratensi canonical monks have always been faithful to the traditions of their small world: for this reason, since the foundation of the abbey, its inhabitants have been famous for the particular attention they dedicated to the reception of guests and pilgrims.
The many pilgrims who traveled from the abbey always found the door open... but not only.
In 1240, in fact, the monks decided to welcome guests by offering them a healthy and refreshing drink. It was a difficult period: the numerous epidemics that at the time shaken the territory made the water unsafe. The solution was brilliant: building a brewery near the abbey!
During the fermentation process, the boiling temperature killed the microbes, making beer safe.
