Franciacorta Century Novo Brut Millesimato
The exaltation of terroir.
Bright green gold, very thin effervescence, of great continuity, so much undermined to seem absent, reactivates to the slightest touch. The olfactory attack is wide, it immediately expresses myelosis tones, not too thin, such as the lime, the rhododendro; the uniqueness of the hill is evidenced by mild irony, minerals, salts; continues on sweet spices, marzapane, balsamic aromas are well ritmati, alternating with the floral part, the elder then emerges in an elegant hint of barley caramel and pear pulp.
Despite the slight dosage the wine is dry, the body appears slender despite the mass, the effervescence has the same development noted to the nose, that is very delicate and creamy; the length reaches impressive levels, especially for the salty memory, of camphor, of fern, with awards of spicy roots and herbs and of horseradish.
Screws used: 100% Chardonnay.
Selection of grapes: In the vineyard with manual collection in boxes of maximum 18 kg. Grapes coming exclusively from our vineyard of La Santissima di Gussago.
Vinification: White in pneumatic press with soft pressing of whole grapes and exclusively use of the I^ fraction. After static and physical separation from the impurities of the must at low temperatures, the inoculation of yeasts selected for fermentation in stainless steel tanks at controlled temperature. It follows the travase and lowering of the temperature at about 10°C to avoid malolactic fermentation. Once added the “drawing syrup”, it is bottled, stopped with the crown cap and coricated in the catasta for the grip of foam.
