Franciacorta DOCG rosé La Torre

The white and red grapes are vinified separately and the preparation of the base takes place at the end of fermentation.

Pinot Noir grapes are fermented in contact with the skin for the time necessary to obtain a rosé base wine, which is then able to give the final product a more or less intense color.

Once the product is finished, we will have fresh and savory characteristics; fine and broad smell; intense foam.

Grapes: Pinot nero 85%, Chardonnay 15%

Vinification: 30% crushed and destemmed with cold maceration and 70% in the press.

Total alcohol content: 12.59% vol.

Sugar: 3.0 gr / lt.

Total acidity: 6.8 g / l.

Extract: 22 g / l.

Aging: 25 months on the lees.

The red embodies the genuine Piedmontese tradition and comes from a base of carefully selected wines.

The warm and enveloping scent of woods, balsamic and mentholated, recalls pharmaceutical blends of the past and is characterized by hints of absinthe, bitter orange, alpine mint, cloves, and other spices.

Ferrari Maximum Brut blanc de blancs Trento DOC

Classic method.

The first label produced by Giulio Ferrari at the beginning of the twentieth century is the Blanc de Blanc with an unmistakable style that conquers for its freshness and fragrance.

Bright straw yellow and perlage of remarkable persistence. Of great intensity. The typical fruity notes of Chardonnay are a prelude to pleasant hints of bread crust and hazelnut conferred by over 30 months of aging on the lees. Fresh and of great finesse, it makes the sip inviting and satisfying. The long finish offers nuances of citrus and mineral sensations.

Franciacorta Secolo Novo Giovanni Biatta Nature reserve

Prestige and aristocracy.

Warmer, golden colour, with slightly lighter specks, creamy foam and very fine bubbles. Open, very generous aromas, pushing towards yellow, warm tones, both of fruit and flowers, orange blossom, candied citron, very ripe and sometimes dehydrated apricot; creamy, liqueur notes come out, sugar cane molasses, rennet apple, licorice paste and a hint of anise and tarte tatin.

Full, warm wine, with a sinewy character, the effervescence still pawing despite the long spent on the lees, then follows a rich saline acid component, which harmonizes a satisfying sip, which in the finish drags an impressive alternation of sensations and acknowledgments, such as blond tobacco, incense and limoncella grass.

Broad chalice; wine that should be treated like a great still white wine, starting from a cool temperature and then rising to 10°.

Vine varieties used: 100% Chardonnay.

Selection of the grapes: in the vineyard with manual harvesting in boxes of a maximum of 18 kg. Grapes that grow exclusively on calcareous rock soil.

Vinification in white, by gravity and without mechanical pressing. You get what is called "free run must", i.e. a must of superior quality even to the first fraction. After filtering the impurities of the must, the inoculation of selected yeasts for fermentation takes place in stainless steel tanks at a controlled temperature. This is followed by racking and lowering of the temperature to around 10°C to avoid malolactic fermentation. Once the "draught syrup" has been added, it is bottled, capped with a crown cap and laid down in a stack for the second fermentation.

Bottle refinement: 72 months.

Franciacorta Secolo Novo dosage zèro riserva

Green gold of great brightness, very fine bubbles that give great persistence.

The perfume is a stab, clear expressiveness, very clean and rigorous; an image emerges: it almost seems to be in the mountains, at the foot of a glacier, between streams and meadows, with the cold air hitting your face; fennel and star anise surround ginger and grapefruit zest, with a finish of white pepper.

In the mouth the wine retraces the stages of the perfume, a slashing blade furrows the palate, the saline expressiveness reaches very high peaks, the acidity returns overbearing, the salivation is impressive; the finish literally makes the tongue and palate dance, a vibrant wine with a very long trail, where spices and spiciness return.

Vine varieties used: 100% Chardonnay.

Selection of the grapes: in the vineyard with manual harvesting in boxes of a maximum of 18 kg. Grapes that grow exclusively on calcareous rock soil.
